This will be the most amazing chicken tortilla soup you’ve ever had; a healthy choice & super easy to make. You can’t go wrong here. Make a lot, because you and whomever you choose to share it with [if you do] will enjoy!
- Roasted rotisserie chicken
- 1 can Diced Mexican tomatoes
- 1 can Creamed corn
- 1 can Northern beans
- 1 can Black beans
- 1 can Kidney beans
- Chopped green chilies (7oz can)
- Chicken broth (16 oz)
- 1 envelope of Taco Seasoning
- 1 envelope of dry Hidden Valley ranch dressing
Shred a rotisserie chicken and put it into a crockpot, add all of the ingredients in, mix it up & let it cook for several hours on low/medium heat.
[Pro tip: leave it on low heat all night and eat it the second day!]
Serve hot. If you want to top it with shredded cheese and melt it in the microwave a little. If you are someone who can afford the carbs, then add in some crumbled up Fritos.
This is obviously a very high protein dish & is also very high in fiber due to all the beans! It is low carb as well [Don’t forget, Carbs – Fiber = Net Carbs; lots of fiber in those beans], especially if you do skip the Fritos!
